This looks amazing. I'll probably make a slight modification by lightly browning the onions and garlic and by using vodka to deglaze instead of dumping it in with the cream at the same time

I am now quite certain that the crimes of this guilty land will never be purged away, but with blood.
I was as at the grocery earlier this week and as I was crossing the store, they had one of the aisle capper deals prominently displayed:
Flamin' Hot Cheetos Easy Mac. boxes were like 89 cents.
they were that neon orangy red with the cheetah in shades on the box. I considered it way too hard before forcing myself to keep walking because "that's not what I am here for."
if they're still there when I go back, I might have to investigate. if I could deconstruct the "Flamin' Hot" flavor and create a curry paste or spice mix that could be added to coconut milk or some kind of bechamel sauce, I could absolutely bring the house down on some pot lucks.
I wish somebody would hack industrial food trade recipes and dump them online. would love to deconstruct and recreate some of those pancrease-destroying guilty pleasures into god-tier meals by using better ingredients and regional/environmental/ethical substitutions.

that cheetos ez mac is the shit if it's under a dollar. they usually want $3 which is ridiculous
Why vodka? Doesn't it boil off? It says just two teaspoons.
Does it change the taste?
So in a traditional Vodka sauce, the alcohol serves two purposes
The first is releasing flavor compounds in the tomatoes that are only soluble in alcohol
The second is that only some of the alcohol boils off, so there's a leetle bit of bite left in the dish
I never got to try flamin hot cheetos

I like Takis (the fuego flavor) better though
I like spicy stuff but I get acid redux sometimes. I never had takis either
