Why vodka? Doesn't it boil off? It says just two teaspoons.

Does it change the taste?

So in a traditional Vodka sauce, the alcohol serves two purposes

The first is releasing flavor compounds in the tomatoes that are only soluble in alcohol

The second is that only some of the alcohol boils off, so there's a leetle bit of bite left in the dish
