Let's Encrypt is fully automated and will issue certificates as long as you provide an email address AND have a proper, working config. Don't get stuck on that email "issue", your problems will lie somewhere else.

As always when problems arise: check the log files.

On one hand, I’m proud that I created the open environment I always wanted growing up.

And congratulations on that!

On the other hand, I can’t help but wonder if people around me would think it crossed a boundary.

You'd have to ask the people around you. But does it really matter? Also, who would go around and tell other people things like that?

I live in Hong Kong and it feels like most American fast food here involves oil and deep fried food.
