Probably the craziest study I've ever seen was one of Harvard's on antibiotic resistance. The tldr is that it took e.coli 11 days to evolve resistance to 1000x the concentration of antibiotic that's normally fatal to wild strains.

It's actually kind of impressive to me that antibiotics don't become obsolete a few years after their discovery.
