"Opt to go uninsured" is certainly how I'd phrase the choice between affording rent and food or healthcare.

Honestly, being uninsured was how I was from the time I was 17 up until 4 years ago. I'm 61 this year.

Until the US gets a single payer / Medicare for all, the best anyone can do is work to stay healthy. :(
