For tables, you can make things easier for yourself by using only one hyphen in the delimiter. The lines at the start and end of each row are unnecessary too. Like this:

header 1|header 2|header 3
|-|-|-|
info|data|thing
stuff||entry
header 1 header 2 header 3
info data thing
stuff entry

Also, you can leave squares blank.
