I did channel switching a while ago, and nothing has changed in that area.
There's a possible bug in the latest Z2M release, which lines up with when my troubles started. Sounds like a fix is in the works, so hopefully that will resolve things.
I'm curious how many devices are on your Zigbee network.
I've got about 30.
Not enough to be a problem. I think things can get unstable around 100-150 devices.
I've had this exact thing happen to me and the solution was so odd I didn't find it for MONTHS.
It was that Tradfri bulbs (some at least) won't transition. So if you have say Adaptive Lighting for example slowly transitioning your bulbs to new colours and brightnesses through the day when the lights are supposed to turn off, then they say they're off but they're physically on.
So turn any transitions off on those bulbs and see if that sorts it out.
I was actually thinking about this again today, and wondering if it was an adaptive lighting issue. I'll give that a go and see what happens.
