It's old people food.
Like how all the old ladies have blue hair and think it looks awesome, it's because their cataracts make their vision yellow tinted, so the blue hair doesn't look blue to them.
People don't think about it, but we lose smell/taste as we age like all other senses.
At about 50 it starts happening. So the elderly people that love Cracker Barrel, literally can't tell that it's bland. The look and mouth feel of the food is like what they remember, so their brain is just filling in the gaps and they're "tasting" from memory and not what they're actually eating.
Add in sensitive esophaguses and stomach lining as another normal part of aging, and everything comes out of the kitchen completely unseasoned so the old folks can put as much salt and pepper as they want at the table.
