Æbleskiver is plural, æbleskive would be singular. No s needed (but those look great!)

Looks like a fun festival! It's a weird juxtaposition to see, I like it. I'll find an æbleskiver stand eventually (more common in the winter) and snap a pic for comparison 🥳
The festival is a hoot. I missed it this year, but each day focuses on a different country. Music, food, folkdancing, costumes, the works.
