Damn, that's a serious tomato operation you've got! If you run out of canning space, try sun-drying some - just slice, salt lightly, and leave in the sun (or low oven) - they shrink down to nothing and the flavor gets super concentrated, perfect for winter cooking when you miss that real tomato taste.
