Goebbels made up his vegetarianism to make him seem more sympathetic. His chef wrote later about all the stuff they made for him, including meat dishes. I can post sources later if you really want but should be easy to find cuz its a commonly debunked thing now.

I heard somewhere that he wrote in his journal later in life about loving pigeon sausages among other meat items. Probably heard it on QI

Edit: according to Wikipedia, Hitler was put on a vegetarian diet by his doctor right about the time he came to power as we know him today.
